Tofu Omelette with Special Sweet Soy Sauce

I remember how this dish was made, back when I was in London for college. I didn't have much in my kitchen pantry, just a carton of eggs, a block of tofu, some onions, shallots, spring onions, chili padi (Bird's eye chili), a few spices, and of course, Kecap Manis (Sweet Soy Sauce). Oh, and white rice, the ultimate staple.


It was winter, and I was feeling lazy and hungry. I didn't want to brave the cold to go grocery shopping, so I decided to get creative with what I had on hand. I figured I could make Tofu Omelette, but I wanted to add some flavor.


That's when I spotted the Kecap Manis in my pantry, my life saver. I chopped up the shallots and chili padi, and added them to the Tofu Omelette.


It was amazing. The omelette were fluffy and tender, while the tofu added a chewy texture. The shallots and chilli padi gave it a flavorful kick, while the Kecap Manis brought it all together with a rich sweetness.


That simple Tofu Omelette drizzled with sweet soy sauce and spices became my go-to meal in college. It was easy to make, satisfying, and delicious. And to this day, it's still one of my favorite comfort foods.



Ingredients:

  • 2-3 eggs

  • 200g medium to firm/hard tofu, drained and crumbled

  • 1/2 medium onion, chopped

  • 1-2 small shallot, diced

  • 2 spring onions, sliced

  • 1-2 red chili padi, thinly sliced

  • 1 lime, squeezed (enhance the flavor)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp cooking oil

  • 2-3 tbsp Kecap Manis (sweet soy sauce)

Preparations:

  1. Cut and marinate the tofu with salt and pepper for 10 min.

  2. Sauce: mix the Kecap Manis sauce with sliced chili, shallots, and lime juice.

  3. Whisk together the eggs until the yolks and whites are fully combined in a mixing bowl, then add spring onions.

  4. Heat the cooking oil in a non-stick skillet over medium-high heat.

  5. Pan-fry onions until soft (sprinkle a bit of salt).

  6. Pour the eggs mixture into the skillet, then tofu. Spread the tofu evenly and cook for 3-5 minutes or until the bottom is set and lightly browned.

  7. Carefully flip the Tofu Omelette over and cook the other side for another 2-3 minutes or until fully cooked and slightly browned.

  8. Slide the Tofu Omelette onto a plate and drizzle the Special Kecap Manis sauce mixture.

  9. Serve hot with steamed white rice.
